Ask A Nutritionist: Meet Bessie O'Connor, RDN

Bessie O’Connor is a registered dietitian nutritionist and a community nutrition adviser at Dairy Council of California, a quasi-state nutrition education organization. As a community nutrition adviser, Bessie works directly with local schools and communities to educate students and families, providing free nutrition education resources and trainings, as well as supporting consumption of healthy foods and food access programs. 

Bessie fell in love with dietetics during her studies in anthropology, where she learned about culture shapes societies and behavior, especially around food. She completed her B.A. in anthropology and continued her education, earning a second degree in dietetics. By the time she completed her dietetic internship at the University of Colorado, Bessie knew she had found her passion. 

As a mother of three children, Bessie understands first-hand the challenges parents experience in making sure their kids are eating healthfully. Establishing a healthy eating pattern can be difficult, but by breaking it down into daily food choices and reinforcing healthy behaviors in multiple settings, Bessie believes greater impacts can be achieved.
