Easy snack: Nutritious AND appealing to children!

Ingredients:

1 cup quick or rolled Oats
1/4 cup toasted Wheat germ or flax seed
1/4 cup whole Wheat flour
1/2 cup enriched Flour
1 teaspoon Baking powder
1/3 cup Sugar
1 teaspoon Cinnamon
1 6 ounce container Yogurt (any flavor)
1 Egg, beaten
1/3 cup Orange juice
1/3 cup dried Cranberries or raisins
1/4 cup finely chopped Almonds

Preparation:

Mix all dry ingredients together by spoon in large mixing bowl. In small bowl mix yogurt, egg and orange juice. Add wet mixture to dry, stirring with spoon until just moistened. Spoon into muffin tins lined with paper or greased well.
Press raisins or dried cranberries barely into surface creating smiley faces. Sprinkle lightly with almonds. Bake at 400° for 20 minutes or until golden brown. Remove muffins promptly from pan when done. Cool slightly. Makes approximately 12 muffins.
