This is one of our favorite quick breakfast foods. You can vary it in many ways and still have the same great results.


2 small Apples
4 heaping tablespoons fat-free Cottage or Cream Cheese
4 slices multi-grain Bread
4 dashes Cinnamon
4 teaspoons low-calorie Sweetener (optional)


1. Pare and core apples. Dice into 1/2" cubes. Cook over low heat until soft.
2. Toast bread in toaster (very brown).
3. Spread cheese on toast.
4. Sprinkle a pinch of sweetener over cheese.
5. Place apples over cheese. Sprinkle cinnamon and sweetener to taste.

Variations: type of bread used, type of fruit used, applesauce, canned sugar-free fruit fillings, spices, top with nuts, raisins or other dried fruit, drizzle a little powdered sugar/milk/vanilla over the top(optional)
