Ingredients:

1 cup Sugar
1/4 cup Water
4 large Jalapeno pepper, sliced half lengthwise
8 cups Cubed seedless watermelon
4 large Peaches, peeled and sliced
4 large Pears sliced
1/2 cup fresh Lime juice
4 ounces crumbled Queso Fresco

Preparation:

1. Combine sugar and ¼ cup water in a medium heavy saucepan; bring to a boil. Cook in 15 seconds or until sugar dissolves. Remove from heat; add jalapeno to sugar mixture. Cover and let stand for 1 hour or until cooled to room temperature. Strain sugar mixture through fine mesh over bowl. Throw away solids.

2. Combine watermelon, pear and peach to large bowl. Stir in sugar mixture and juice, mixing gently to coat.

3. Sprinkle cheese lightly and serve.
