This fresh salad is a tasty change from boring iceburg lettuce.

Ingredients:

12 large Prawns
1 ruby Grapefruit
1 navel Orange
1 blood Orange
1 Fennel bulb
1/4 pound Mixed greens
2 ounces favorite Vinaigrette
3 tablespoons olive Oil
2 cloves fresh-minced Garlic
1 Lemon

Preparation:

Prawns: Peel and devein. Marinate, 2-3 hours, in olive oil, minced garlic, salt and pepper. Squeeze half of lemon juice over mixture.

Citrus: Peel & segment. Clean, core & shave the fennel bulb. Place in ice water for 5-10 minutes.

While shrimp is cooking, being careful not to overcook, gently toss greens, fennel, citrus and dressing. Place cooked shrimp around plate and serve.
