Cinnamon and apple make this cake a delicious and fresh treat.

Ingredients:

1-1/2 cup oil
2 cups sugar
2 eggs, lightly beaten
3 cups flour
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
2 tsp vanilla
3 cups fresh sliced, peeled apples

Glaze for cake:
1/2 cup brown sugar
1/2 cup butter
1/8 cup milk
1 tsp vanilla

Preparation:

Mix all ingredients together in a large mixing bowl, adding apples last. Place into a greased 9 X 13 cake pan. Bake at 325 degrees F for 1-1/2 hours.
For glaze, mix in a medium sauce pan and boil for 2-1/2 minutes. Pour over cooled cake.

To reduce the fat and calories in this dish, omit the glaze and/or replace half the oil with applesauce.
