Ingredients:

12 ounces bulk Italian sausage
1 cup Onion, chopped
2 Garlic cloves, minced
1 14.5 ounce can diced Tomatoes, undrained
1 8 ounce can Tomato sauce
1 tablespoon dried Italian seasoning, crushed
1 teaspoon Fennel seeds, crushed (optional)
1/4 teaspoon black Pepper
9 dried Lasagna noodles
1 Egg, beaten
1 15 ounce container of Ricotta cheese
1/4 cup grated Parmesan cheese
6 ounces shredded Mozzarella cheese
Extra Parmesan cheese (optional)

Preparation:

For sauce, in a large saucepan cook sausage, onion and garlic until meat is brown; drain.

Stir in undrained tomatoes, tomato sauce, Italian seasoning, fennel seeds (op'l) and pepper into meat mixture. Bring to boiling; reduce heat. Simmer, covered, for 15 mins., stirring occasionally.

Meanwhile, cook noodles for 10 to 12 mins. or until tender but still firm. Drain noodles; rinse noodles and set aside.

For filling, combine egg, ricotta and the 1/4 cup of Parmesan cheese. Set aside.

Spread about 1/2 cup of the sauce over the bottom of a 2-qt rectangular baking dish. Layer 3 noodles in bottom of dish. Spread filling, top with sauce, sprinkle with mozzarella cheese and parmesan cheese. Then repeat layers.

Place baking dish on a baking sheet. Bake in 375 F oven for 30 to 35 mins or until heated through. Let stand for 10 mins before serving.

Cook's Notes:

MAKE AHEAD: Prepare as above except for last step. Cover unbaked lasagna; chill up to 24 hours.

TO SERVE: Bake covered in 375 F oven for 40 mins; uncover and bake 20 mins more until heated through. Let stand for 10 mins before serving.

Use reduced-fat ricotta to lower the fat and calories in this dish.
