Add some texture to those turkey meatballs!


1 pound ground Turkey
2/3 cup Matzo meal
1/4 cup liquid Egg substitute
2 tablespoons Butter or margarine
2 cloves Garlic, minced
6 cups Water
4 cups low-sodium Tomato juice
1 1/2 cups uncooked tri-color Pasta twists
2 large Carrots, peeled and thinly sliced
2 large Tomatoes, chopped
1 large Onion, chopped
1 tablespoon Italian seasoning
1/2 teaspoon ground black Pepper
1 (10-ounce) package frozen chopped Spinach, thawed


In small bowl, thoroughly mix turkey, matzo meal and egg product. Shape into 24 (1-inch) balls. In large saucepan over medium-high heat, brown meatballs, in batches, in butter or margarine. Remove meatballs. In same saucepan, cook and stir garlic for 3 minutes or until browned. Add water, tomato juice, meatballs, pasta, carrots, tomatoes, onion, Italian seasoning and pepper. Heat to a boil. Cover; reduce heat. Simmer for 15 minutes. Add spinach; cook an additional 5 minutes or until pasta is tender. Makes 10 (1 1/2-cup) servings.

Cook's Notes:

For a Kosher preparation, use margarine instead of butter and select Kosher turkey and egg products.
