Healthy Eating: Raise a Glass!

June 1 is World Milk Day. Join us as we raise a glass of milk and toast hard working dairy farm families and milk processors across the country. We salute the men and women who make sure milk stays healthy, safe and wholesome, often taking just two days to travel from the farm to local retailers. Dairy foods go beyond milk to also include yogurt, cheese, butter and more. We celebrate recipes that feature these ingredients this week as World Milk Day also kicks off National June Dairy Month.

Raise your milk glasses as you enjoy a featured family meal of Broccoli Beef and Potato Hot Dish, Cornmeal Drop Biscuits and Apples and Cream Shake. Other dairy-rich recipes to enjoy all week and month long include New England Clam Chowder, Squash + Leek Lasagna, Roasted Bananas with Chocolate Yogurt Cream and Brown Rice with Milk.

Another way to honor dairy farm families during June Dairy Month is supporting the Great American Milk Drive. Milk is the most requested, yet least donated food bank item. While 68 gallons of milk are the average recommendation, most food bank clients only receive about one gallon per person per year. The Great American Milk Drive is a year-round national effort that supplies coupons, or vouchers, to local food banks that families can redeem at retailers for the variety and size of milk, up to a retail cost of $5 that they prefer. HEALTHY EATING SHOPPING LIST

BROCCOLI BEEF AND POTATO HOT DISH
1½ pounds Broccoli, cut into 1-inch florets (about 6 cups)
2 tablespoons Canola oil, divided
1½ pounds 95%-lean ground Beef
1 large Onion, chopped
2 tablespoons Worcestershire sauce
1 teaspoon Garlic powder
1¼ teaspoons Salt, divided
4 cups low-fat Milk
⅓ cup Cornstarch
2 cups shredded sharp cheddar Cheese, preferably orange
¼ teaspoon ground Turmeric
4 cups frozen hash-brown or precooked shredded Potatoes
1 large Egg, lightly beaten
One-half teaspoon freshly ground Pepper
Canola or olive oil cooking spray
One-quarter teaspoon Hungarian Paprika, preferably hot

CORNMEAL DROP BISCUITS
1⅓ cups all-purpose Flour
⅓ cup yellow Cornmeal
1 tablespoon Sugar
1½ teaspoons baking Powder
¼ teaspoon Salt
½ cup plus 2 tablespoons skim Milk
2 tablespoons vegetable Oil
1 Egg, beaten
Vegetable cooking spray

APPLES AND CREAM SHAKE
2 cups vanilla low-fat Ice Cream
1 cup unsweetened Applesauce
¼ teaspoon ground Cinnamon or Apple Pie Spice
1 cup fat-free skim or 1% low-fat Milk
