Makes asparagus really taste good and is a great dish for company.


2 pounds Asparagus, washed + tough ends removed
4 ounce package of Prosciutto, diced small
1 tablespoons minced fresh Garlic
1/2 to 3/4 cup grated Asiago or Parmesan cheese
Salt & pepper to taste


Par boil asparagus in salted water to almost done stage, about 10 minutes, remove from water and cut into 1-2" pieces.

While asparagus is boiling, fry up prosciutto on medium heat in non-stick skillet, until crispy, about 10 minutes. Drain any excess oil, add garlic and asparagus just to heat back up, stir in cheese and serve.

Cook's Notes:

I also add minced garlic to the water that I boil the asparagus in. Asparagus could be done in microwave or stove a day in advance for an even quicker side dish for company.

Use half the amount of Prosciutto to cut the fat, calories and sodium in this dish.
