This is a DELICIOUS easy to prepare meal, when you have A LOT of green peppers, as I usually do, from my garden.


1 dozen large green bell Peppers
2-3 packages frozen chopped Spinach (or 16-20 ounces fresh Spinach)
2 cups Bread crumbs (Italian bread crumbs add seasoning)
2 Eggs
1 cup shredded Cheddar cheese
1 cup shredded Mozzarella cheese
1 8 ounce package Cream cheese
Salt and Pepper to taste


Wash and slice the tops off of green peppers, clean out the seeds. Boil gently in salted water (about 15 minutes) till soft but NOT mushy. Place cooked peppers on a cookie sheet, set aside.

Cook spinach and drain.

Mix all the cheeses together, add the bread crumbs and eggs, mix with hands, add the spinach and salt and pepper. Mix well with hands til well blended.

Add a fist-full of the mixture into each green pepper, mounded slightly.

When on the cookie sheet, place few drops of oil on each pepper.

Bake 325° for 25-30 minutes!

Cook's Notes:

*Lower the fat and calorie content by substituting lower-fat dairy products.

*Fresh spinach can be used in place of frozen. Wash, trim and chop two to three large bunches of spinach, saute with 1/2 teaspoon of olive oil and 1 crushed clove of garlic until wilted.
