Ingredients:

1 piece lemon Rind
1 cup brown Rice
3 cups Water
4 cups Milk 2%
1 stick Cinnamon stick
1/2 teaspoon Vanilla extract
1 cup granulated Sugar
2 tablespoons Raisins

Toppings
2 tablespoons chopped Walnuts
1 tablespoon ground Cinnamon

Preparation:

Soak rice and lemon rind in water for 15-20 minutes. Drain the rice, transfer rice and lemon rind to saucepan.

Add 2 cups of milk and cinnamon stick. Bring to a boil. Immediately reduce heat to very low and simmer, stirring often and scraping the bottom for about 45 minutes.

Add the remaining milk, vanilla, raisins and sugar and simmer for another 15 minutes. Stir often to keep from sticking to the bottom of the pot.

Remove from heat, let cool and pour into a bowl.

Top with ground cinnamon and walnuts.
