A great way to use up garden zucchini!

Ingredients:

1/2 cup Butter
1/2 cup vegetable Oil
1 1/3 cup Sugar
2 Eggs
1 teaspoon Vanilla
1/2 cup sour Milk
2 1/2 cups Flour
1/2 cup Cocoa
1/2 teaspoon baking Powder
1 tsp Salt
2 cups grated Zucchini
1/2 cup Chocolate chips
1/2 cup chopped Nuts

Preparation:

Cream butter, sugar and oil. Add eggs, vanilla and sour milk.

Mix dry ingredients together in a separate bowl and add to creamed mixture. Add zucchini.

Pour into a greased and floured 9 x 13-inch baking pan. Sprinkle top with chocolate chips and nuts. Bake at 350 for 45-50 minutes.

Cook's Notes:

To sour milk add 1/2 teaspoon white vinegar or lemon juice to 1/2 cup of milk, let stand for 15 minutes.

Use low-fat or fat-free milk and omit the added nuts to lower the fat and calories in this recipe.
