Forget take-out and enjoy Mexican food at home with this quick and easy taco recipe.

Ingredients:

1 can refried Beans
12 corn Tortillas
1 1/2 pounds ground Beef
1/2 Onion, chopped
1 packet low-sodium Taco seasoning
3 cups shredded Lettuce
3 cups chopped Tomatoes
1 cup grated Cheddar cheese
1 cup Sour cream
3 cups Salsa

Preparation:

Fry ground beef with onions, pouring off excess fat. Stir in taco seasoning. Heat refried beans in a saucepan. Warm tortillas one at a time in a frying pan over medium heat, flipping them several times. Keep warm in a clean dish towel.

Fill tortillas with beef and/or beans, and let diners top the filling with lettuce, tomatoes, cheese, sour cream and salsa.

Cook's Notes:

Use extra lean ground beef, ground turkey or chicken as well as low-fat or fat-free sour cream and part skim milk cheese to lower the fat and calories in this dish.

Tacos pack a lot of good food into those shells. Add Spanish rice and a salad of shredded cabbage and carrots with tangy vinaigrette, just like the restaurants do.
