A quick and easy soup that can be made vegetarian.

Ingredients:

2 tablespoons Olive oil
1 clove Garlic, crushed
1 Onion, chopped
2 Celery sticks, chopped
2 bunches Broccoli, cleaned and chopped
6 cups Water
2 Vegetable or Chicken bouillon cubes, low-sodium
1/2 teaspoon Thyme
1 tablespoon unsalted Butter

Preparation:

Saute onion in oil in soup pot. Add in broccoli and cook for 5 minutes. Add remaining ingredients and cook for 10 minutes over low to medium heat.
