Delicious no-sauce pizza - olive oil, cambozola cheese and figs!


1/4 ounce dry active Yeast
1 cup tepid Water
1/4 cup Olive oil
2 cups bread Flour
2 teaspoon Kosher Salt
1 pinch Sugar

3 ounces Cambozola cheese (room temperature- rind removed)
12 Figs
4 medium Shallots (thinly sliced)
Cabernet or Pinot Noir for marinade
Parmesan cheese


*Note figs need to be marinated at least four hours before prep.

Dissolve together yeast and warm water. Add olive oil, flour, salt and sugar. Mix until dough comes to a ball. Let rise until double in volume. Punch down and let rise again.

Form pizza shell by rolling out with flour.

Brush shell with olive oil.

Top with cambozola cheese. Sprinkle with thinly sliced shallots.

Take 12 figs (black mission, calmyra or other favorites- preferably fresh), slice and marinate in Cabernet or Pinot Noir for at least four hours - place on top of cheese.

Sprinkle with Parmesan, salt and pepper, drizzle with honey.

Cook on thin bed of cornmeal at 475 degrees for 10-12 minutes.

Makes 1 medium pizza. Nutrition is based on two servings, but recipe can be cut into smaller squares and served appetizer-style for parties.
