Ingredients:
4 large sweet potatoes or yams, peeled, cooked and mashed
1 orange
1 lemon
2 eggs
1/2 cup butter
1 cup milk
3/4 cup sugar (or less if potatoes are sweet)
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
Preparation:
Grate the peels off of the orange and lemon. Add all ingredients together and mix with handmixer until smooth and well blended. Place in greased 9" x 13" pan (if you double the recipe) or smaller. Top with mini-marshmallows. Bake at 350 degrees F for approximately 45 minutes.
