Quick, flavorful breakfast muffins

Ingredients:

1 cup butter, melted and cooled
3/4 cup buttermilk
2 cups whole wheat flour
2 cups whole rolled oats
1/2 cup applesauce
¾ cup honey
1 egg
1 t. sea salt
1 t. baking soda
1 t. vanilla
1 cup coconut, raisins, chocolate chips or dried fruit

Preparation:

1. Mix together the 1st 4 ingredients. If desired, soak overnight.
2. Add the rest of the ingredients.Mix well.
3. Spoon into greased muffin tins.
4. Bake at 375 for 15-18 minutes
