Ingredients:

4 cups cubed day-old Bread, such as whole-wheat, raisin, sourdough or oatmeal
2 cups fat-free Milk, scalded
3/4 cup each: fat-free Egg substitute, packed dark brown Sugar
1 teaspoon Vanilla
1 teaspoon Brandy or Rum, optional
Confectioners' Sugar, optional

Preparation:

Heat oven to 350 degrees F. Coat a 2-quart nonstick baking dish with cooking spray. Place cubed bread in baking dish and set aside. Combine milk, egg, brown sugar, vanilla and brandy (if desired) and pour over bread cubes in dish. Bake for 35-40 minutes, or until set. Cool on wire rack for 10 minutes. Lightly dust with confectioners' sugar, if desired.
