3 cups shredded Zucchini
1 cup prepared Baking mix
1/2 cup chopped Onion
1/3 tablespoon Oregano
Dash Garlic powder
4 Eggs
1/2 cup grated Cheese
2 tablespoons Parsley
1/2 teaspoon Salt
Dash black Pepper
1/4 cup Vegetable oil


Mix all ingredients in a bowl and pour in a greased 12 inch oblong pan. Bake at 350 degrees until golden brown, about 45 minutes.

Cook's Notes:

Adding cooked ground turkey, lean beef or low-fat sausage before cooking as a variation. Serve with a salad and bread for a delicious and easy meal.

You can use any type of cheese- cheddar, ricotta, parmesan, etc.

Reduce the fat and calories by using two whole eggs and four egg whites, or using eight egg whites or one cup egg substititue. Reduced fat ricotta cheese could also help lower the calories and fat in this recipe.
