4 whole-wheat Tortillas, 8 inch size
1 1/3 cups low-sodium, vegetarian refried Beans
1 cup reduced-fat Cheese, Cheddar or Colby-Jack


1. Cover and heat beans in the microwave for 1 minute.
2. Grate cheese.
3. Spread heated beans on tortillas, in a small area towards the center of tortilla, less than 1/3 of the total area.
4. Sprinkle grated cheese over beans.
5. Fold the bottom "flap" of the tortilla up, then fold the left hand side of the tortilla over the bean and cheese mixture. Fold the top of the tortilla down over the mixture and turn the burrito so the right hand side of the tortilla is folded under the bottom. This should keep the loose mixture from dripping out.
6. Microwave on high for 30 seconds. Let sit for 1 minute then serve with hot sauce or salsa as desired.
