This is the English version of Ensalada de Col y Zanahorria y Pina from Day 1 of the Meals Matter Family Meal Plan for Latinos.


3 cups (canned own juice) Chopped Pineapples
6 cups Cabbage Finely Chopped
3 whole medium Shredded Carrots
6 tablespoons Raisins

8 tablespoons Natural Plain Lowfat Yogurt
3 tablespoon Lemon Juice
6 tablespoons Mayonnaise Reduced Fat


1. In a salad bowl, mix pineapple, cabbage, carrot and raisins.
2. In a sauce bowl, mix yogurt, lemon juice and mayonnaise.
3. Pour dressing into salad bowl mix and mix together.
4. Keep refrigerated until served.
