1 (18-inch) piece of stale Italian Bread, cut into 1-inch pieces
1/3 cup plus 2 tablespoons extra-virgin Olive oil, divided
1 Garlic clove
3 tablespoons highest quality Balsamic vinegar
1 1/2 pounds Tomatoes, cut into 1-inch pieces
1 small red Onion, thinly sliced
1 pound fresh Burrata, cut into 1-inch chunks
1/2 cup chopped Basil


1.Preheat oven to 375°F with rack in middle.

2.Toss bread with 2 tablespoons oil and 1/4 teaspoon each of salt and pepper in a large 4-sided sheet pan, then spread out in 1 layer. Bake, stirring once, until golden, 12 to 15 minutes.

3.Mince and mash garlic to a paste with 1/2 teaspoon salt. Transfer to a large bowl and whisk in vinegar and remaining oil.

4.Add croutons to dressing along with tomatoes, onion, burrata and basil, then toss and serve.

Cook's Notes:

Burrata is an Italian cheese similar to mozzarella with a creamy liquid center. Mozzarella can easily be substituted in this dish.
