Ingredients:

2 cups green Cabbage, shredded
2 cups red Cabbage, shredded
2 blood or naval Orange, peeled and chopped
1 cup Jicama, peeled and finely diced
2 cups pitted fresh or frozen sweet Cherries
1 cup butter Lettuce, washed, dried and torn into bite-size pieces

Ginger Lemon Dressing
2 teaspoon Ginger, grated
Juice of 2 Lemons (about 6 tablespoons)
1 tablespoon rice wine Vinegar
2 tablespoons extra virgin olive Oil

Preparation:

Whisk together ginger, lemon, vinegar and oil. Set aside.

Combine remaining ingredients in large salad bowl.

Top with Ginger Lemon Dressing. Serve cold.
