Quick + Easy Breakfast for someone on the go!

Ingredients:

Cooking spray
2 Eggs; plus 2 egg whites
Splash fat-free Milk
1/4 teaspoon Hot sauce
Salt & pepper
1 tablespoon bell Pepper, diced
1 tablespoon Tomato, diced
2 ounces low-fat Cheese (recommended spicy pepper cheese)
2 whole-wheat Tortillas

Preparation:

Spray skillet with Cooking Spray. Heat skillet on medium heat and add the bell pepper. Cook until soft and a little carmelized.

Meanwhile, beat the egg and egg white's with the milk and hot sauce. Add salt and pepper.

Add tomatoes to the pan with the bell pepper. then add egg mixture and cook until eggs are light and fluffy. Add shredded cheese to eggs. Take the pan off the burner and let cheese melt. Mix egg mixture together then divide this b/w the tortilla's. Roll tortilla's into burrito shape. Serve immediately!

This is a wonderful breakfast. With all the protein this should keep you full and satisfied until lunch....well at least until sanck time! Try adding fresh fruit for a well balance breakfast.
