1/2 pound fresh Mozzarella cheese, part skim2 large red Tomatoes1 large yellow Tomato1/2 teaspoon Salt3 tablespoons extra virgin Olive oilFresh ground Pepper1/2 cup fresh BasilBalsmic Vinegar
Cut tomatoes & cheese into slices. Place tomatoes on platter sprinkle with salt; top with cheese slices. Repeat layers. Drizzle with olive oil.Cover & chill 4 hours.Just before serving drizzle with balsmic vinegar & sprinkle with basil & black pepper.
