1/2 pound fresh Mozzarella cheese, part skim
2 large red Tomatoes
1 large yellow Tomato
1/2 teaspoon Salt
3 tablespoons extra virgin Olive oil
Fresh ground Pepper
1/2 cup fresh Basil
Balsmic Vinegar


Cut tomatoes & cheese into slices. Place tomatoes on platter sprinkle with salt; top with cheese slices. Repeat layers. Drizzle with olive oil.

Cover & chill 4 hours.

Just before serving drizzle with balsmic vinegar & sprinkle with basil & black pepper.
