Family Meals Matter: Favorite Recipes

All good things must come to an end, and that is true for this column. For the last edition of Family Meals Matter, we go back to our roots, family favorites that can be combined into meals featuring all five food groups.

Over the last 8 years, we’ve provided over 400 different family meal combinations and thousands of additional recipes. Many of these recipes will continue to be available on the HealthyEating.org website. 

For our last Featured Family Meal, we've combined family favorites Cornmeal Crusted Chicken Nuggets with Blackberry MustardBroccoli with Creamy Parmesan sauce and Raspberry Mango Sundaes. Other family favorites to enjoy include Simple Roast Chicken, Baked Spinach and Artichoke Dip, Rhubarb Fool and Old Fashioned Spaghetti + Meatballs.

(Includes ingredients to make at least four servings of each Featured Family Meal recipe)

CORNMEAL-CRUSTED CHICKEN NUGGETS WITH BLACKBERRY MUSTARD
Ingredients:
1 cup fresh Blackberries or raspberries, finely chopped
1 1/2 tablespoons whole-grain Mustard
2 teaspoons Honey
1 pound Chicken tenders, cut in half crosswise (see Tip)
1/2 teaspoon Salt
1/4 teaspoon freshly ground Pepper
3 tablespoons Cornmeal
1 tablespoon extra-virgin Olive oil


BROCCOLI WITH CREAMY PARMESAN SAUCE 
Ingredients:
1 pound Broccoli
1 tablespoon all-purpose Flour
1 cup fat-free Milk, divided 
1/2 cup freshly grated Parmesan cheese
1/4 teaspoon Salt
Pinch of ground white Pepper
Pinch of ground Nutmeg (optional)


RASPBERRY MANGO SUNDAES

Ingredients:
1 cup thawed frozen Raspberries
2 tablespoons Sugar
1/2 teaspoon Lemon juice
4 scoops of fat-free vanilla frozen Yogurt
1 Mango, diced 
4 tablespoons chopped toasted Nuts
