Healthy Eating: Memorial Day BBQ

Memorial Day honors all those who have lost their lives in service to our country. This solem day is often celebrated as the start of the summer season. So as you pull the BBQ out of winter storage, take a moment to salute our fallen heroes.

Marinara Sauce
2 teaspoons extra-virgin olive Oil
1 small Onion, finely chopped
4 cloves Garlic, minced
2 cups chopped plum Tomatoes, with juices
6 oil-packed sun-dried Tomatoes, drained and finely chopped
½ teaspoon Salt
½ teaspoon freshly-ground Pepper
2 tablespoons chopped fresh Basil
1 pound 93% lean ground Turkey
¼ cup finely-chopped Scallions
2 teaspoons minced Garlic
2 teaspoons Worcestershire sauce
1 teaspoon freshly-grated Lemon zest
½ teaspoon dried Oregano
½ teaspoon freshly-ground Pepper
¼ teaspoon Salt
½ cup shredded part-skim mozzarella Cheese, divided
2 tablespoons finely-chopped fresh Basil
2 teaspoons extra-virgin Olive oil
4 4-inch-square slices foccacia Bread, (about 2 ounces each), toasted

1 seedless or English Cucumber, diced
2 cups Roma or cherry Tomatoes, diced
2 Avocados, diced
15.5-ounce can Black Beans, rinsed and drained
2 tablespoons red Onion, minced
Juice of 2 Limes
2 tablespoons Cilantro, minced (optional)
Dash Salt and fresh Pepper

3 ripe Peaches, halved and pitted
1 tablespoon brown Sugar
2 teaspoons lemon Juice
3 cups fat-free vanilla frozen Yogurt
6 Gingersnaps, crumbled (optional)
