Stuck without a needed ingredient? Here's a list of common substitutions. Your results may be a little different than usual, especially in baking.

YOGURT is a miracle-worker. Use it instead of...

Mayonnaise 1 teaspoon Dijon mustard + 1 cup plain Yogurt, salt and pepper
Sour cream Plain or vanilla yogurt + 1 teaspoon Baking soda added to dry ingredients
Cream cheese Put plain Yogurt in a coffee filter-lined strainer over a large bowl. Cover and refrigerate 24 hours. Save the whey for baking!
Soup base 2 tablespoons Flour + 1 cup plain Yogurt

General Substitutions

1 teaspoon Baking powder One-third teaspoon Baking soda + one-half teaspoon Cream of tartar
1 cup Cake flour 1 cup less 2 tablespoons all-purpose Flour
1 tablespoon Flour for thickening 1 1/2 teaspoons Cornstarch or arrowroot

1 cup Buttermilk 1 cup Milk mixed with 1 tablespoon white Vinegar; let stand 10 minutes. Or 1 cup Yogurt
