A very simple but sumptuous recipe!

Ingredients:

2 English Cucumbers cubed 1"
7 ounces Feta cheese (in tub not dry pack)cubed
1/4 cup packed Mint leaves chopped
1/2 Lemon zest
1 tablespoon Olive oil
3 tablespoons Lemon juice
Salt and fresh ground Pepper

Preparation:

Mix together in bowl cucumber, feta, mint, and lemon zest.

Place oil, lemon juice, and good pinch of salt in small jar. Close and shake to emulsify.

Pour over other ingredients, grind on some pepper, and toss lightly to coat.

Serve immediately.
