A very simple but sumptuous recipe!
2 English Cucumbers cubed 1"7 ounces Feta cheese (in tub not dry pack)cubed1/4 cup packed Mint leaves chopped1/2 Lemon zest1 tablespoon Olive oil3 tablespoons Lemon juice Salt and fresh ground Pepper
Mix together in bowl cucumber, feta, mint, and lemon zest.Place oil, lemon juice, and good pinch of salt in small jar. Close and shake to emulsify.Pour over other ingredients, grind on some pepper, and toss lightly to coat.Serve immediately.
This salad travels well. Just leave dressing in jar and toss just before serving. Omit the added salt or opt for reduced-sodium feta to cut the sodium in this recipe.
