Cool and creamy. Perfect on a warm night as an appetizer or alongside a burger.

Ingredients:

1 lg. onion, chopped
1 tblsp. butter or margarine
1-2 zucchini, sliced
1 can fat-free chicken broth
1 cup fat-free plain yogurt
2 tblsp. fresh chives

Preparation:

Saute onion in butter until golden. Add zucchini and cook 1-2 minutes more. Add chicken broth, cover and cook 5 minutes. Cool, puree in blender. Transfer to bowl, add yogurt and chives and blend. Chill well before serving.
