1 lg. onion, chopped1 tblsp. butter or margarine1-2 zucchini, sliced1 can fat-free chicken broth1 cup fat-free plain yogurt2 tblsp. fresh chives
Saute onion in butter until golden. Add zucchini and cook 1-2 minutes more. Add chicken broth, cover and cook 5 minutes. Cool, puree in blender. Transfer to bowl, add yogurt and chives and blend. Chill well before serving.
