Ingredients:

8 cups Arugula
8 teaspoons Olive oil
2 teaspoons Lemon juice
4 teaspoons Balsamic vinegar
5 cups Watermelon, cubed
8 tablespoons crumbled Feta
1 1/3 cups Hummus
2 whole-wheat Pitas, 5 or 6 inch diameter

Preparation:

1. Toss arugula with olive oil, lemon juice and balsamic vinegar.

2. Gently toss arugula with watermelon cubes and crumbled feta.

3. Cut pitas in half and stuff with one-third cup hummus.

4. Serve pitas with watermelon-arugula salad.
