Goes great with Beef Burgers!
1 English Cucumber or two small regular Cucumbers, peeled, seeded and cut into 1/2 slices (2 cups)3 tablespoons red wine Vinegar1 tablespoon granular Sugar substitute1/2 teaspoon Salt2 small Tomatoes, seeded and coarsely chopped (1 1/3 cups)4 green Onions, chopped (1/2 cup)1/4 cup fresh Mint, chopped2 tablespoons extra-virgin olive OilSalt and freshly ground black Pepper
1. In a large bowl combine cucumber, vinegar, sugar substitute and salt. Marinate for 30 minutes.2. Add tomatoes, green onions, mint and olive oil. Gently mix to combine and season to taste with additional salt and pepper
A brief marinating time softens the texture of the cucumbers and imbues them with flavor. This colorful salad goes with just about any grilled or broiled entree.
