This is a great dinner idea for Halloween.

Ingredients:

1 small-medium Pumpkin
1 Onion, chopped
2 tablespoons Vegetable oil
1-2 pounds ground Beef
2 tablespoons Soy sauce
2 tablespoons brown Sugar
1 4-ounce can sliced Mushrooms, drained
1 10 3/4 ounce can cream of Chicken soup
1 1/2 cups cooked Rice
1 8-ounce can sliced water Chestnuts, drained

Preparation:

Cut off top of pumpkin and thoroughly clean out. Preheat over to 350°F.

In large skillet, saute onions in oil until tender. Add meat and brown. Drain.
Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 min stirring ocasionaly.
Add cooked rice and water chestnuts.

Spoon mixture into pumpkin shell. Replace pumpkin top and place on a baking sheet.
Bake 1 hour or until inside meat of pumpkin is tender.

Put pumpkin on plate, remove lid and serve.
