This is a great dinner idea for Halloween.
1 small-medium Pumpkin1 Onion, chopped2 tablespoons Vegetable oil1-2 pounds ground Beef2 tablespoons Soy sauce2 tablespoons brown Sugar1 4-ounce can sliced Mushrooms, drained1 10 3/4 ounce can cream of Chicken soup1 1/2 cups cooked Rice1 8-ounce can sliced water Chestnuts, drained
Cut off top of pumpkin and thoroughly clean out. Preheat over to 350°F.In large skillet, saute onions in oil until tender. Add meat and brown. Drain.Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 min stirring ocasionaly. Add cooked rice and water chestnuts.Spoon mixture into pumpkin shell. Replace pumpkin top and place on a baking sheet.Bake 1 hour or until inside meat of pumpkin is tender.Put pumpkin on plate, remove lid and serve.
