Ingredients:

3 tablespoons Butter
3 tablespoons Flour
2 cups Milk
4 or 5 large Potatoes (peeled and cut into slices)
1 large Onion, chopped
1 cup cubed, cooked Ham or bacon pieces
1/4 teaspoon Pepper
4 cups shredded Cheese (1 pound)

Preparation:

Melt butter in saucepan over low heat, add flour and stir until smooth. Cook 1 minute while stirring constantly. Gradually stir in milk while cooking over medium heat until thickened.
Layer 1/2 potato slices, onion, ham, pepper, cheese and white sauce in order given. Repeat second layer. Cover and bake at 350 degrees for 1 hour and 15 minutes. In order to save time, potatoes can be cooked on stove, also cheese can be melted in the white sauce.
