This is a lower calorie quick bread that is full of flavor.


1 1/2 cup all-purpose Flour
1 1/4 teaspoons Baking Soda
1 teaspoon Salt
1 teaspoon ground Cinnamon
1/2 teaspoon ground Nutmeg
1/4 teaspoon Ginger
1 1/3 cup solid pack Pumpkin puree
1 cup packed brown Sugar
1/2 cup reduced-fat Buttermilk OR 1/2 cup Milk and 1/2 teaspoon Lemon juice
1 Egg
2 tablespoons Butter, softened
1 teaspoon Vanilla


Preheat oven to 350 degrees F

Sift the flour, baking soda, salt, cinnamon, nutmeg and ginger into a large bowl.

Mix in pumpkin, brown sugar, buttermilk, egg, butter and vanilla until well blended.

Pour into a greased 9 x 5 inch loaf pan and smooth the top.

Bake for 1 hour or until a toothpick inserted into the center comes out clean.
