This is a lower calorie quick bread that is full of flavor.
1 1/2 cup all-purpose Flour1 1/4 teaspoons Baking Soda1 teaspoon Salt1 teaspoon ground Cinnamon1/2 teaspoon ground Nutmeg1/4 teaspoon Ginger1 1/3 cup solid pack Pumpkin puree1 cup packed brown Sugar1/2 cup reduced-fat Buttermilk OR 1/2 cup Milk and 1/2 teaspoon Lemon juice1 Egg2 tablespoons Butter, softened1 teaspoon Vanilla
Preheat oven to 350 degrees FSift the flour, baking soda, salt, cinnamon, nutmeg and ginger into a large bowl. Mix in pumpkin, brown sugar, buttermilk, egg, butter and vanilla until well blended.Pour into a greased 9 x 5 inch loaf pan and smooth the top.Bake for 1 hour or until a toothpick inserted into the center comes out clean.
