A great salad you can toss together.
1 cup plain low-fat (or fat-free) Yogurt3 Granny Smith Apples peeled and cubed1/3 cup Pistachios1/3 cup of blue Cheese crumblesSqueeze of Lemon juice1 teaspoon Cayenne pepper 1 teaspoon Black pepper
Mix yogurt and pepper. Squeeze lemon juice onto apples and add to yogurt mixture. Let chill for an hour. When ready to serve, add blue cheese and pistachios. Mix well. Serve immediately.
